Peach crisp

adapted from How to Cook Everything by Mark Bittman

“This dish sure was delicious.” —Sam Landsberg

Ingredients:
6 cups peeled sliced peaches
2 teaspoons ginger
Juice of 1/2 a lemon
2/3 cup brown sugar
Cooking spray (such as Pam)
2 1/2 tablespoons unsalted butter, cut into bits
1/2 cup rolled oats (yum, healthy …)
1/2 cup all purpose flour
1/4 cup chopped nuts
Dash of salt

Directions:
1 Preheat oven to 400°.

2 Mix fruit with half the ginger, lemon juice and a tablespoon of brown sugar, and spread it in a baking pan sprayed with cooking spray.

3 To make the topping, combine all other ingredients in another bowl.

4 Spread the topping over the fruit and bake for 30 to 40 minutes. Serve hot or at room temperature. (As a substitute for ice cream, mix plain yogurt with maple syrup and cinnamon sugar.)
